Basil Jack Meatloaf

This meatloaf is a great way to get use your fresh basil from the garden.

Ingredients

  • Yield : Makes 6 servings
  • Cook Time : 45 minutes
  • Total Time : 1 hour
  • 1 lb ground beef
  • 1/2 cup ketchup, more for over top
  • 1 cup breadcrumbs
  • 1/2 red onion
  • 3/4 cup fresh basil, chopped
  • 1 cup shredded Monterey Jack cheese
  • 2 large eggs
  • 1 tsp garlic, minced
  • olive oil cooking spray

Instructions

  • Preheat oven to 400 degrees.
  • 1 Combine the ground beef, ketchup, breadcrumbs, onion, basil, cheese, eggs and garlic. Mix well. Coat a 9x5 inch loaf pan with cooking spray. Shape the meat mixture into a loaf to fit into the pan.
  • 2 Spread ½ cup ketchup over the top of the meatloaf and bake for 45 minutes or until thoroughly cooked. Let stand for 10 minutes before slicing and serving.
