Basil Jack Meatloaf
This meatloaf is a great way to get use your fresh basil from the garden.

ketchup, more for over top

breadcrumbs

red onion

fresh basil, chopped

shredded Monterey Jack cheese

garlic, minced

Instructions

Preheat oven to 400 degrees.

Combine the ground beef, ketchup, breadcrumbs, onion, basil, cheese, eggs and garlic. Mix well. Coat a 9x5 inch loaf pan with cooking spray. Shape the meat mixture into a loaf to fit into the pan.

Spread ½ cup ketchup over the top of the meatloaf and bake for 45 minutes or until thoroughly cooked. Let stand for 10 minutes before slicing and serving.
