Crunchy Maple Salmon with Almonds

This salmon is sweet and savory and the bakes up perfectly.

Ingredients

  • Yield : Makes 4 servings
  • Cook Time : 20 minutes
  • Total Time : 30 minutes
  • cooking spray
  • 1/4 cup brown sugar
  • 1/4 cup soy sauce (low sodium)
  • 1/4 cup maple syrup
  • 1 tbs Dijon mustard
  • 1/2 tsp ground ginger
  • 1/4 tsp freshly ground pepper
  • 4 6 oz salmon filets
  • 1/2 cup sliced almonds

Instructions

  • Preheat oven to 425 degrees.
  • 1 Coat baking dish with cooking spray. In a small bowl combine sugar, soy sauce, syrup, mustard, ginger and pepper. Place salmon in baking dish and pour sauce over each fillet. Cover with foil and bake for 10 minutes.
  • 2 Meanwhile, toast almonds, turning occasionally, in a small skillet over medium heat, for 3-5 minutes or until golden.
  • 3 Remove baking dish from oven, remove foil, and sprinkle almonds over each fillet, pressing to adhere if necessary. Return to oven and bake uncovered for 10 more minutes or until salmon is opaque and flakes easily when pierced with a fork. Serve salmon with extra sauce drizzled over the top.
