Scrambled Eggs and Canadian Bacon
This is an eggs-tremely" good Canadian bacon scramble on hearty multi-grain toast. A delicious way to end the day!

hearty muli-grain bread

Canadian bacon

sour cream

fresh chives, chopped

1 1/2 cups
fresh strawberries, stems removed

Put oven rack in middle position and preheat oven to 450 degrees.

Spread half of the butter onto one side of bread. Arrange bread slices on a large baking sheet and toast in oven, without turning over, until golden, about 8 minutes. Transfer each toast to individual plates.

While bread toasts, lightly whisk together eggs, milk, and salt, and pepper in a bowl. Cook bacon in remaining butter in a large nonstick skillet over moderately high heat, stirring occasionally, until lightly browned, 1 to 2 minutes; set aside. Add eggs and cook, undisturbed, until they begin to set around edge, about 1 minute, then cook, stirring occasionally with a spatula, until just set, about 1 minute more. Divide bacon among toast and top with eggs, a dollop of sour cream and chives and arrange strawberries on the side.
