Seriously, nothing brings us comfort more than a melty, buttery grilled cheese sandwich. This quick fare brings us back to our childhood when our moms would whip one up and pair with a cup of tomato soup.
After reading a recipe for grilled cheese from Martha, we took the bait and decided to add the secret ingredient and put it to the test. It truly was the most delicious grilled cheese ever, actually, it could be the Perfect Grilled Cheese! The special ingredient of honor is Mayo. Pure and simple. Add a little to the softened butter you use to spread on the outside and what you find is a sumptuous, velvety, cheesy delight. Here’s the recipe:
The Best Grilled Cheese Sandwiches
8 (1/2-inch-thick) slices sourdough sandwich bread
3 tablespoons unsalted butter, room temperature
3 tablespoons mayonnaise
8-12 slices American cheese
- Arrange bread in a single layer on a clean work surface. Stir together butter and mayonnaise. Spread mixture evenly onto one side of every slice (1 scant tablespoon per slice).
- Heat a large skillet, preferably cast iron, over medium. Flip over bread on work surface (so it’s plain-side up). Place slices of American cheese on 4 slices. Top with remaining slices.
- Place sandwiches in a skillet (in two batches, if needed). Reduce heat to medium-low; gently top sandwiches with a lid. Cook, flipping once halfway through, until crisp and golden and cheese is melted, 7 to 9 minutes.
