Basil Jack Meatloaf
1 pound lean ground beef
1 cup ketchup divided
1 cup breadcrumbs
1/2 red onion chopped
3/4 cups fresh basil chopped
1 cup shredded Monterey Jack cheese
2 large eggs
1 teaspoon garlic, minced
Preheat oven to 400 degrees.
 Combine the ground beef, half of ketchup, breadcrumbs, onion, basil, cheese, eggs and garlic. Mix well. Coat a loaf pan with cooking spray. Shape the meat mixture into a loaf to fit into pan.
 Spread remaining ketchup over the top of the meatloaf and bake for 45 minutes or until thoroughly cooked. Let stand for 10 minutes before slicing and serving.
Skillet Corn with Bacon
4 bacon slices cut into 1-inch strips
8 ear(s) fresh corn kernels cut from the ear
coarse salt and freshly ground pepper, to taste
1 pinch crushed red pepper flakes
2 green onions sliced
 Cook bacon in a large skillet over medium-high heat, turning occasionally, until browned, 4 to 6 minutes. Drain off all but 1 teaspoon of the bacon grease.
 Add corn; season with salt and pepper, and a pinch of crushed red pepper. Cook, stirring often, until corn is tender, 5 to 8 minutes. Stir in green onions. Serve immediately.
