Triple Cheese Pesto Pita Pizzas


8 ounces cream cheese softened

3 tablespoons milk

1/2 cup prepared pesto sauce

1 2.25-ounce can sliced black olives drained

1.5 cups shredded mozzarella cheese

1 cup shredded Parmesan cheese

3 tablespoons Italian parsley chopped

8 whole wheat pita breadss


Preheat oven to 425 degrees.
In a small bowl, mix cream cheese and milk until smooth.
Place pitas on an ungreased cookie sheet and spread cream cheese mixture on pitas to within 1/4 inch of edge. Carefully spread pesto over cream cheese and top with the olives.
Sprinkle with the cheeses and the parsley. Bake until thoroughly heated and cheese is melted, 7 to 12 minutes.

Classic Italian Salad


1/2 head Romaine lettuce washed and torn

1 tomato sliced

1/2 cucumber peeled and sliced

1/4 cup prepared balsamic vinaigrette dressing

1/4 cup shredded Parmesan cheese

coarse salt and freshly ground pepper, to taste


In a salad bowl, toss lettuce, tomato and cucumber. Season with salt and pepper. Add enough dressing to coat and serve garnished with cheese.
