Pumpkin Soup with Creme Fraiche
3 cups vegetable broth
2 cups canned pumpkin
1/2 teaspoon cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon allspice
1/4 teaspoon ground nutmeg
1 tablespoon honey
2 tablespoons maple syrup
1/2 chipotle chile in adobo sauce seeded and diced
3/4 cups creme fraiche
coarse salt and freshly ground pepper, to taste
1/2 loaf French bread
1/2 cup pine nuts toasted
Preheat oven to 300 degrees.
 Bring broth to a boil in a large saucepan over high heat. Whisk in the pumpkin puree, cinnamon, ginger, allspice, nutmeg, honey, syrup and chipotle chile. Reduce the heat to low and simmer for 15-20 minutes, stirring occasionally. Add more broth if the soup is too thick. While soup is simmering, toast pine nuts in a small skillet over medium heat for 3-5 minutes or until lightly browned and fragrant.
 Meanwhile, wrap bread in foil and heat in oven for 5-7 minutes.
 Remove soup from heat and whisk in the cr?me fraiche and season with salt and pepper to taste. Sprinkle pine nuts on top and serve with bread.
Gala Fruit Salad
2 Gala apples peeled, cored and cubed
1 1/2 pint container fresh blueberries
2 bananas peeled and sliced 1/4-inch thick
1/4 cup orange juice
2 oranges peeled and cubed
 Place apples, blueberries, bananas, orange juice and orange pieces in a large bowl; toss until well combined.
