Slow Cooker Coq au Vin

Ingredients

10 bacon slices

1 whole chicken(s) (3 1/2 - 4 pounds) cut into parts

1/2 cup all purpose flour divided

1 yellow onion chopped

8 ounces sliced button mushrooms

1.5 pounds small new potatoes

2 teaspoons garlic, minced

1/4 cup Italian parsley chopped

1/2 teaspoon dried thyme

2 bay leafs

coarse salt and freshly ground pepper, to taste

1 cup red wine

2 cups chicken broth

Before pulling bacon strips apart, cut strips crosswise to make 1 inch pieces. Cook in a large skillet over high heat until crisp, about 810 minutes. Remove to paper towels, and drain all but a light coating of the grease from the skillet.

Dredge chicken pieces in half the flour on a large plate. Over medium high heat add chicken to skillet, cooking until lightly browned on all sides.

Transfer chicken and bacon to slow cooker. Add onion, mushrooms, potatoes, remaining flour, garlic, parsley, thyme, bay leaf, salt and pepper, wine, and broth. Stir until all ingredients are moistened.

Cover and cook on low for 6 hours, or until juices run clear when chicken is pierced with a fork. Baste occasionally if possible. Remove bay leaves. Be careful not to overcook chicken, and beware of small bones that may have detached while cooking. Serve with a glass of hearty French red (optional) and voil?!

Buttered Egg Noodles

Ingredients

8 ounces egg noodles

3 tablespoons butter

1/4 cup Italian parsley chopped

1/4 cup shredded Parmesan cheese

Cook the noodles in a large pot of boiling salted water until cooked through but still firm to the bite. In a small microwave-safe bowl, melt the butter in the microwave. Mix in the parsley and cheese.

Drain the pasta in a colander and return to the pan. Pour in butter mixture and toss to coat. Serve immediately.
