Not So Sloppy Joes

Ingredients

1.25 pounds ground beef

1 teaspoon garlic, minced

1 teaspoon ground cumin

1 10-ounce can Rotel tomatoes with chilies drained

2 tablespoons brown sugar

1 tablespoon cider vinegar

4 hoagie rolls split in half

1 avocado pitted, peeled and sliced

1/2 white onion sliced

coarse salt and freshly ground pepper, to taste

1.5 cups water

2 tablespoons tomato paste

Cook the beef in a large skillet over medium-high heat, breaking apart big pieces with a wooden spoon, until lightly browned, about 5-6 minutes. Drain fat from the meat and season with salt and pepper. Add the garlic and cumin and cook for another minute or two.

Add the tomatoes, brown sugar, vinegar, tomato paste, and the water. Reduce the heat to medium-low and simmer until thickened, about 15 minutes.

Spoon the beef mixture evenly over the bottom halves of the rolls and top with avocado and onion.

Classic Garden Salad

Ingredients

1/2 head Romaine lettuce washed and torn

1 cucumber peeled and sliced

1/4 white onion chopped

1/4 cup prepared balsamic vinaigrette dressing

1/4 cup crumbled feta cheese

Instructions

In a salad bowl, combine lettuce, cucumber and onion. Toss with dressing to coat. To serve, place in individual bowls and sprinkle with feta cheese.
