Roast Beef Wraps with Walnuts
1/4 cup Dijon mustard
1/4 cup pineapple preserves (we like Smuckers)
2 tablespoons horseradish sauce
4 large flour tortillas
1/2 pound roast beef thinly sliced
1/2 head Romaine lettuce leaves separated
1/2 cup shredded cheddar cheese
1/4 cup chopped walnuts toasted
2 green onions chopped
 In a small bowl, stir together the Dijon, preserves and horseradish. Spread mixture evenly on tortillas. Layer each wrap evenly with roast beef and lettuce; sprinkle each with cheese, nuts and green onions.
 Roll up tightly. Cut in half diagonally and serve. How To Fold A Wrap: Fold one end of each tortilla up toward the center, tuck the ends, then continue to roll until you have a wrap.
Romaine With Creamy Garlic Dressing
1/2 head Romaine lettuce chilled and torn
3 tablespoons olive oil
1 tablespoon white wine vinegar
1 tablespoon Dijon mustard
1 teaspoon garlic, minced
2 tablespoons water
1/2 teaspoon dried tarragon
1/2 cup baby carrots
coarse salt and freshly ground pepper, to taste
 In a small bowl, whisk together the oil, vinegar, mustard, garlic and water. Stir in the tarragon and season with salt and pepper.
 Place the lettuce on plates, top with carrots and drizzle dressing over the top.
