Grilled Chicken Sandwiches with Basil Mayonnaise
3/4 cups mayonnaise
1/4 cup fresh basil chopped
2 teaspoons white vinegar
2 boneless, skinless chicken breasts
4 tablespoons olive oil divided
2 teaspoons garlic, minced divided
2 zucchini trimmed, cut lengthwise into 1/3-inch-thick slices
1 red onion cut into1/3-inch-thick slices
4 kaiser rolls split horizontally
1 tomato sliced
coarse salt and freshly ground pepper, to taste
Heat grill* to medium heat.
 Blend together the mayo, basil and vinegar in bowl; season mayonnaise with salt and pepper, to taste.
 Using meat mallet, flatten chicken breast between two sheets of plastic wrap to 1/2-inch thickness; cut chicken crosswise in half. Place on sheet of foil. Brush chicken with half of the oil; sprinkle with half of garlic and salt and pepper.
 Place zucchini and onion slices on sheet of foil and brush with remaining oil; sprinkle with remaining garlic and salt and pepper.
 Grill chicken pieces until cooked through, about 4-5 minutes per side; transfer to work surface. Grill vegetables (use grill basket if you have one) until softened slightly and charred, about 7 minutes per side for onion and 5 minutes per side for zucchini. Transfer to work surface.
 Grill rolls until toasted, about 2 minutes. Spread basil mayonnaise on roll bottoms; top with 1 chicken piece, grilled vegetables, and tomato slices. Cover with roll tops. *NOTE: You can broil the chicken and sautée the vegetables, rather than grill.

 Place grapes and blueberries in individual bowls, serve.
