Baked Tilapia with Parsley and Thyme

Ingredients

1.25 pounds tilapia fillets

coarse salt and freshly ground pepper, to taste

1/2 teaspoon Old Bay seasoning

3 tablespoons butter melted

1/2 cup Italian parsley chopped

1 tablespoon dried thyme

2 whole lemon(s), cut into wedges for garnish

4 focaccia rolls

Preheat oven to 375 degrees.

Place the fillets in a rimmed baking dish, with the flat side down and season with salt, pepper and Old Bay seasoning. Drizzle the butter evenly over the top of the fillets.

Sprinkle the fish with parsley and thyme and bake until opaque throughout, about 15 minutes. Wrap the rolls in foil and heat in the oven during the last 5 minutes. Serve the fish garnished with lemon wedges and serve rolls with butter, if desired.

Baby Broccoli

Ingredients

2 bunches baby broccoli

1 teaspoon balsamic vinegar

1 tablespoon butter softened

coarse salt and freshly ground pepper, to taste

In a medium saucepan with water to cover, cook baby broccoli over medium high heat until just tender, 7 to 8 minutes. Drain. Season to taste with salt and pepper. Place butter with balsamic vinegar on top and toss.
