Italian Caprese Sandwiches

Ingredients

8 slices thick sourdough bread

2 tablespoons olive oil

1 cup fresh basil leaves left whole, extra for garnish

2 beefsteak tomatoes cored and sliced

1 8-ounce fresh mozzarella ball sliced thick

coarse salt and freshly ground pepper, to taste

Preheat broiler to high.

Brush one side of each bread slice with olive oil. Place half of the slices, oil side down, on a baking sheet and layer with basil leaves, tomato slices, and mozzarella cheese. Sprinkle lightly with salt and pepper and top with remaining bread slices, oil side up.

Broil sandwiches, turning once, until bread is golden brown and cheese is melted, 1 to 2 minutes per side. Garnish to taste with the extra basil and any herbs you have on hand

Orzo with Olive Oil and Green Onions

Ingredients

8 ounces orzo pasta

1 tablespoon olive oil

4 green onions sliced (white and light green parts)

coarse salt and freshly ground pepper, to taste

Cook pasta in a large pot of boiling salted water until cooked through, careful orzo cooks quickly. Add olive oil and the onions and toss gently. Season to taste with salt and pepper. NOTE: This pasta works great with leftovers from the fridge. Add in diced tomato, chopped peppers, feta. You might need to add some more oil.
