Turkey Meatloaf Muffins


1 pound ground turkey

1/2 yellow onion chopped fine

2 stalks celery chopped fine

1/2 green bell pepper cored, seeded and chopped fine

2 large eggs plus a splash of milk, beaten

1 cup breadcrumbs

2 tablespoons grill seasoning, McCormick or Montreal

1 cup fruity barbecue sauce divided

1 tablespoon Worcestershire sauce

cooking spray

2 carrots peeled and chopped fine


Preheat oven to 375 degrees.
Place the ground turkey in a large mixing bowl.
Add the onion, celery, green pepper and carrots to the turkey.
Add the egg mixture, bread crumbs, grill seasoning and Worcestershire to the bowl. Pour half the bbq sauce into the bowl with the meatloaf mix. Mix the meatloaf together with your hands.
Spray muffin tins* with cooking spray. Fill meat into each tin, filling 3/4 full. Top each meat loaf with a spoonful of extra sauce. Bake about 20 minutes, more if you are using large muffin tins. Cut open 1 muffin to test that the middle is cooked through. *You can use large or small muffin tins.

Cheddar Mashed Potatoes


4 medium baking potatoes peeled and cut into 1-inch chunks

3/4 cups milk

3 tablespoons butter

1/2 cup extra sharp white cheddar cheese grated, plus extra for garnish

coarse salt and freshly ground pepper, to taste

2 green onions chopped


In a medium saucepan, cover potatoes with 2 inches of water. Bring to a boil; reduce to a simmer and cook until potatoes are tender, about 15 minutes.
Drain potatoes and return to pan.
In a small saucepan, bring milk and butter to a simmer over medium heat. Pour half of hot milk mixture over potatoes. Using a potato masher, mash potatoes until just smooth, gradually adding enough of remaining milk mixture to reach desired consistency. Mix in cheddar; season with salt and pepper. Serve garnished with green onions and additional cheddar cheese.
