Greek Burgers on Flatbread
1.25 pounds ground beef
coarse salt and freshly ground pepper, to taste
1.5 teaspoons dried oregano
4 flat bread wraps, such as Flat Out
1/2 cup prepared hummus
1/2 red onion sliced
1/2 cup crumbled feta cheese
2 tablespoons olive oil
1 whole lemon(s), cut into wedges
4 cups fresh spinach
Preheat grill to medium-high heat.
 Shape ground beef into small 2-inch patties. Season with salt, pepper, and oregano. Grill the patties over medium heat, turning once, until cooked all the way through, about 4-6 minute per side.
 Spread hummus along one side of the flatbread and add the patties, spinach, red onion and feta cheese. Drizzle sandwiches with olive oil and serve with lemon wedges.
1 5.8-ounce package couscous (garlic flavored)
1 cup vegetable broth
3 whole lemons juiced and zested
1 tablespoon butter
3 tablespoons Italian parsley chopped
 In a medium saucepan, combine broth, lemon zest, lemon juice, butter, and the couscous seasoning packet, and bring to a boil over medium-high heat. Stir in couscous; cover and remove from heat. Let stand for 10 minutes. Stir in parsley and serve.
