Zesty Grilled Salmon

Ingredients

1.25 pounds salmon fillet

1 tablespoon zest of lime finely grated

LIME BUTTER

1 garlic clove(s) chopped

1/4 cup lime juice

1 teaspoon salt

1/2 teaspoon black pepper

1/2 cup unsalted butter melted

10 ounces frozen cut green beans

1/4 cup slivered almonds

Prepare grill to medium-hot and lightly oil racks.

To prepare sauce; puree garlic with lime juice, salt and pepper in a food processor or blender until smooth. With motor running, add melted butter and blend until emulsified, about 30 seconds.

In a large saucepan of boiling, salted water, cook beans for 4-5 minutes, or until just tender. Drain beans and keep warm. Just before serving sprinkle almonds on top.

Season salmon with salt and pepper and grill, flesh sides down, 4 minutes. Turn fillets over and grill until just cooked through, 4 to 6 minutes more.
