Easy Cheddar Chicken

Ingredients

1 sleeve Ritz crackers crushed

1.5 cups shredded sharp cheddar cheese

1 teaspoon garlic, minced

4 boneless, skinless chicken breasts

6 tablespoons butter melted

Instructions

Preheat oven to 350 degrees.

In a medium bowl, combine the crackers, cheese, garlic and salt and pepper.

Dip the chicken in the butter, then in the cracker mixture, pressing gently to help the crackers adhere. Place the chicken on a foil-lined baking sheet.

Sprinkle any remaining cracker mixture on the chicken and drizzle with any remaining butter. Bake until the chicken is golden brown, 25 to 30 minutes.

Garlic Butter Broccoli

Ingredients

1 medium bunch broccoli broken into small florets and thinly sliced

2 tablespoons butter

1 teaspoon garlic, minced

coarse salt and freshly ground pepper, to taste

In a saucepan, cook broccoli in lightly salted boiling water until crisp-tender, 2 to 4 minutes. Drain in colander. In same saucepan, heat butter and cook garlic until softened, 1 to 2 minutes. Return broccoli to pan and toss to coat; season with salt and pepper and toss again.
