Spinach and Sausage Stuffed French Bread Pizza


1/2 loaf French bread

1/2 pound ground sweet Italian sausage

1 tablespoon olive oil

1/2 red bell pepper seeded and chopped

1 teaspoon garlic, minced

1 10-ounce package frozen chopped spinach thawed and squeezed dry

coarse salt and freshly ground pepper, to taste

1 cup ricotta cheese

1/4 cup shredded Parmesan cheese

1 cup shredded mozzarella cheese

1 teaspoon dried oregano

1/2 teaspoon crushed red pepper flakes

2 tablespoons butter softened

1/2 yellow onion chopped


Preheat oven to 425 degrees.
Split bread lengthwise and hollow it out. Cut in half across, making shells for individual pizzas. Spread butter on bread.
Heat a skillet over medium high heat and brown sausage in olive oil. Add red bell pepper, onion and garlic. Cook 3 to 5 minutes, add spinach. Remove mixture from heat and season with salt and pepper, to taste.
Transfer sausage mixture to a bowl. Add ricotta and Parmesan and combine. Fill bread shells with mixture and top with mounded mozzarella cheese. Place in hot oven on cookie sheet and bake until cheese melts and bubbles and bread is super crisp, about 10 to 12 minutes. Top pizzas with oregano and hot pepper flakes.

Classic Italian Salad


1/2 head Romaine lettuce washed and torn

1 tomato sliced

1/2 cucumber peeled and sliced

1/4 cup prepared balsamic vinaigrette dressing

1/4 cup shredded Parmesan cheese

coarse salt and freshly ground pepper, to taste


In a salad bowl, toss lettuce, tomato and cucumber. Season with salt and pepper. Add enough dressing to coat and serve garnished with cheese.
