Bacon and Cheddar Burgers


1.25 pounds ground beef

2 tablespoons barbecue sauce

1/2 teaspoon garlic powder

4 bacon slices cut into 1/4 inch pieces

1/2 white onion finely chopped

1/2 cup shredded sharp cheddar cheese

4 hamburger buns

1/2 head Romaine lettuce washed, leaves separated

1 tomato thinly sliced

coarse salt and freshly ground pepper, to taste


Preheat grill to medium-high heat.
In a large mixing bowl, combine beef, salt and pepper, barbecue sauce, and garlic powder. Using your hands, shape the mixture into round balls (one per serving) and set aside. Rinse out bowl.
In a medium skillet over medium-high heat, cook bacon until evenly browned, about 4 to 6 minutes. Transfer to a paper towel-lined plate. Pour out all but a thin coating of bacon grease from skillet. Reduce heat to low and sauté onions in skillet until translucent and beginning to brown, about 5 minutes. Transfer onions to mixing bowl and combine with bacon.
Using your fingers, make a well in the middle of each meatball and fill with a tablespoon of onion mixture. Add 1-2 tablespoons of grated cheese and seal shut. Flatten balls into individual patties.
Grill the patties over medium-high heat, turning once, until cooked all of the way through, 10 to 12 minutes. Just before burgers are finished cooking, lightly grill buns for 1-2 minutes. Serve on buns, topped with lettuce and tomato.

Baked Beans With Apples


1 16-ounce can Bush's baked beans

1/2 yellow onion chopped

1/4 cup brown sugar

1/4 cup barbecue sauce

1 Granny Smith apple diced

coarse salt and freshly ground pepper, to taste

cooking spray


Preheat oven to 350 degrees.
In a baking dish* coated with cooking spray, combine beans, onion, sugar, barbecue sauce and apple. Season to taste with salt and pepper. Bake for 30 minutes, or until hot and bubbly. *Baking dish sizes: 7 x 3 loaf pan (for 2), 8 x 8 pan (for 4), 13 x 9 pan (for 6-8).
