Bacon and Cheddar Burgers

Ingredients

1.25 pounds ground beef

2 tablespoons barbecue sauce

1/2 teaspoon garlic powder

4 bacon slices cut into 1/4 inch pieces

1/2 white onion finely chopped

1/2 cup shredded sharp cheddar cheese

4 hamburger buns

1/2 head Romaine lettuce washed, leaves separated

1 tomato thinly sliced

coarse salt and freshly ground pepper, to taste

Instructions

Preheat grill to medium-high heat.
[1]
In a large mixing bowl, combine beef, salt and pepper, barbecue sauce and garlic powder. Using your hands, shape mixture into round balls (one per serving) and set aside. Rinse out bowl.
[2]
In a medium skillet over medium-high heat, cook bacon until evenly browned, about 4-6 minutes. Transfer to a paper towel lined plate. Pour out all but a thin coating of bacon grease from skillet. Reduce heat to low and sautée onions in skillet until translucent and beginning to brown, about 5 minutes. Transfer onions to mixing bowl and combine with bacon.
[3]
Using your fingers, make a well in the middle of each meatball and fill with a tablespoon of onion mixture. Add 1-2 tablespoons of grated cheese and seal shut. Flatten balls into individual patties.
[4]
Grill the patties over medium-high heat, turning once, until cooked all of the way through, 1012 minutes. Just before burgers are finished cooking, lightly grill buns for 1-2 minutes. Serve on buns, topped with lettuce and tomato.
