2 tablespoons olive oil
1 pound ground sweet Italian sausage
coarse salt and freshly ground pepper, to taste
1 yellow onion finely chopped
2 carrots peeled and grated
4 garlic clove(s) finely chopped
2 cups water
4 cups chicken broth
1 28-ounce can Italian crushed tomatoes
8 lasagna noodles broken into jagged pieces
1/2 cup shredded Parmesan cheese
 In a soup pot, heat the oil over medium-high heat. Add the meat, season with salt and pepper and cook until browned, 3-4 minutes.
 Stir in the onion, carrots and garlic and cook until softened, 5-7 minutes. Stir in water, the chicken broth and tomatoes; cover and bring to a boil. Add the pasta and cook until al dente, about 15 minutes. Season with salt and pepper. Serve with Parmesan.
Garlic Cheese Bread
1/2 loaf French bread
1/4 cup olive oil
2 teaspoons garlic, minced
1 cup shredded mozzarella cheese
2 tablespoons Italian parsley chopped
Preheat broiler to high.
 Slice bread in half lengthwise. In a small bowl, mix together oil and garlic. Place bread on a baking sheet. Brush cut sides with garlic oil, sprinkle with parsley and cover with cheese.
 Broil until cheese melts and just begins to brown. Slice and serve.
