BBQ Meatloaf Muffins


1.25 pounds lean ground beef

1/2 white onion finely chopped

2 large eggs beaten

1 cup breadcrumbs

1/2 teaspoon dried basil

1/2 teaspoon dried oregano

1 cup smoky barbecue sauce

2 tablespoons Worcestershire sauce

Preheat oven to 400 degrees.
Place the ground beef into a large bowl, add onion and mix well.
Add eggs, bread crumbs, basil and oregano to the bowl. Next, mix together the barbecue sauce and the Worcestershire sauce in a small bowl. Pour half the sauce mixture into the bowl with the meatloaf mix.
Mix the meatloaf together with your hands adding more bread crumbs if needed. Spray a muffin tin* with cooking spray. Use an ice cream scoop to help you fill meat into each cup. Top each meat loaf with a spoonful of extra sauce. Bake about 20-25 minutes. Cut open 1 muffin to test that the middle is cooked through. Note: If serving 2 use 4 muffin cups; if serving 4, use 8 muffin cups; if serving 8, use 16 muffin cups (assuming 1/2 cup sized muffin cups). Note: For a cute presentation, nest muffin on top of pile of potatoes.

Skillet Potatoes


2 pounds new potatoes halved

2 tablespoons water

1 tablespoon coarse salt

2 tablespoons butter softened


Place the potatoes in the bottom of a large cast iron skillet. Add water and sprinkle with salt. Cover tightly and place over low heat. Cook for 40 minutes or until done. Do not lift the lid while potatoes are cooking. Top with butter and enjoy!
