Spaghetti Pepperoni Pie

Ingredients

10 ounces spaghetti broken up into thirds

1/3 cup Italian seasoned breadcrumbs

1/2 32-ounce jar prepared chunky marinara sauce

2 cups shredded mozzarella cheese divided

7 pepperoni slicess chopped

1/4 teaspoon crushed red pepper flakes more or less to taste

2 large eggs lightly beaten

1/2 cup shredded Parmesan cheese

Instructions

Preheat oven to 350 degrees.

In a large pot of boiling salted water, cook spaghetti until cooked through but still firm to the bite. Drain.

Meanwhile spray baking dish* with cooking spray, then coat with the breadcrumbs.

In a large bowl, combine cooked spaghetti, pasta sauce, half of mozzarella, pepperoni and crushed red pepper. Stir in beaten eggs. Spoon mixture into prepared pans.

Add remaining mozzarella and Parmesan on top. Cover with foil and bake for 30 minutes. Remove foil and bake for 10 more minutes, until browned and bubbly. * 7 x 3 loaf pan (for 2), 8 x 8 pan (for 4), 13 x 9 pan (for 6-8)
