Fish Sandwich with Jalapeno Slaw


1 cup milk

coarse salt and freshly ground pepper, to taste

1.25 pounds tilapia fillets

1 cup cornmeal

2 green onions thinly sliced

2 tablespoons whole grain mustard

2 tablespoons pickled jalapeno chiles chopped, plus a splash of juice

1/4 cup vegetable oil

4 cups cole slaw mix

4 hoagie rolls split and toasted

1/4 cup mayonnaise


Put the milk in a wide shallow dish and season with salt and pepper. Add the fish and set aside to soak until ready to fry. Put the cornmeal in another wide shallow dish and season generously with salt and pepper.
Combine the green onions, mayonnaise, mustard, jalapeños and a splash of pickling juice in a bowl. Set aside. Heat vegetable oil in a large skillet over medium heat until very hot.
Remove half of the fillets from the milk, shaking off the excess, and dredge in cornmeal to coat. Place in the skillet and brown until golden and cooked through, 4 minutes per side, turning gently. Transfer to a paper towel lined plate and season with salt. Repeat with the remaining fillets.
Toss the slaw with the jalapeno dressing and season with salt, pepper and more pickling juice, if desired. Divide the fish and slaw among the rolls.

Apple Fruit Salad


2 Gala apples cored and cut into 1-inch pieces

2 bananas sliced

1/4 cup chopped walnuts

1/2 cup "Craisins"

1/4 cup mini marshmallows

1/2 cup frozen whipped topping thawed


Mix together apples, bananas, nuts, "Craisins" and marshmallows in a medium bowl. Gently fold in whipped topping, mixing to combine. Serve immediately.
