Parmesan Chicken Burgers

Ingredients

1/2 cup breadcrumbs

1/4 cup fresh basil finely chopped

1 cup prepared marinara sauce divided

1 pound ground chicken

1 tablespoon olive oil

1/4 white onion finely diced

coarse salt and freshly ground pepper, to taste

4 ciabatta rolls sliced

1/2 8-ounce fresh mozzarella ball

1 cup mixed baby greens

1/2 cup shredded Parmesan cheese

Place breadcrumbs, Parmesan and basil in a small bowl and mix until thoroughly combined. Reserve half of mixture and place other half onto a shallow dish.

Mix 3/4 of marinara in a small saucepan; heat until warm over low heat, stirring occasionally. Place the remaining marinara into a large bowl. Add chicken, oil, onion, reserved crumbs mixture and salt and pepper. Mix until thoroughly combined.

Shape chicken mixture into thick patties; carefully dredge both sides in crumbs on shallow dish, to form a thin coating.

Heat a little oil in large skillet over medium heat. Cook patties until bottom sides are crisp and brown, about 4-5 minutes. Gently flip patties and cook 2 minutes more. Thinly slice the cheese and top the burgers with cheese slices, cover pan, and cook 2 more minutes, until patties are cooked through and cheese is melted. Lightly toast rolls while chicken cooks.

Spread thin coating of marinara-basil sauce onto rolls. Top each slice with a burger and some of the greens. Pour remaining sauce into ramekins and serve as a dip on the side.

Italian Mozzarella Salad

Ingredients

1/2 head Romaine lettuce washed and torn

1 tomato cored and sliced

1 2.25-ounce can sliced black olives drained

1/2 red onion sliced

1/4 cup prepared balsamic vinaigrette dressing

1/2 8-ounce fresh mozzarella ball cubed

Instructions

Place lettuce, tomato, olives, mozzarella and onion in a medium bowl.

Toss with enough dressing to coat and serve.
