Asian Turkey Burgers


cooking spray

2 carrots

1 red onion halved and divided

1 pound ground turkey

1/2 cup panko bread crumbs

2 tablespoons hoisin sauce

1 tablespoon fresh ginger grated

2 teaspoons soy sauce (low sodium)

1 teaspoon Asian sweet chili sauce

1 red bell pepper cored and thinly sliced

2 teaspoons toasted sesame oil (can sub reg sesame oil)

4 tablespoons lime juice

2 pieces pita bread sliced in half


Preheat the oven to 375 degrees.
Spray a baking sheet with cooking spray. Pulse the carrot(s) and half of the onion in a food processor. Place in a bowl and add the turkey, panko, hoisin sauce, ginger, soy sauce and chili sauce and mix until combined. Shape the turkey mixture into patties and place on the prepared baking sheet. Bake until cooked through, about 20 minutes.
Thinly slice the remaining onion. Add sesame oil to a small skillet and heat over medium heat. Add the onion and red pepper and sautée for 5 minutes or until soft. Squeeze lime juice over the top.
Warm the pita bread in the oven for a few minutes. Serve the burgers on half of a pita; stuff the pepper mixture inside or serve on the side.

Asian Cucumbers


3/4 cups seasoned rice vinegar

1/4 cup water

1 tablespoon sugar

1 tablespoon garlic, minced

1 tablespoon soy sauce (low sodium)

1 teaspoon toasted sesame oil (can sub reg sesame oil)

1/2 teaspoon black pepper

2 cucumbers peeled and sliced

2 tablespoons sesame seeds toasted


Stir together vinegar, water, sugar, garlic, soy sauce, sesame oil, and pepper in a large bowl. Add cucumbers, tossing to coat. Cover and chill 1 hour.
Meanwhile, toast the sesame seeds in a shallow skillet over medium heat for 2-3 minutes.
Add sesame seeds, and toss; serve immediately.
