Honey Orange Pork Chops with Sweet Potato Mashers


1/2 cup fresh orange juice

1 tablespoon olive oil

1 teaspoon Cajun seasoning

1 teaspoon Worcestershire sauce

1/8 teaspoon coarse salt

4 bone-in pork chops

2 tablespoons honey

4 medium sweet potatoes

2 tablespoons butter


Whisk the orange juice, olive oil, Cajun seasoning, Worcestershire sauce and salt in a large bowl. Pierce the pork chops in several places with a fork, then add to the bowl with the marinade and turn to coat. Let marinate 30 minutes or up to 2 hours. Preheat the oven to 375 degrees.
Transfer the pork chops to a baking pan coated with cooking spray, reserving the marinade.Bake the chops 15 minutes, then turn and continue baking until slightly golden, about 10 more minutes.
Preheat the broiler. Whisk the honey into the reserved marinade and brush onto the chops. Broil until golden and a thermometer inserted into the center registers 145 degrees F, about 4 minutes per side. Let rest 5 minutes.
Meanwhile, pierce the sweet potatoes in a few places with a fork and microwave until soft, about 20 minutes. Cut in half and scoop the flesh into a bowl. Add the butter and a dash of Cajun seasoning and mash; season with salt. Serve the pork chops with the mashed sweet potatoes and drizzle with the pan juices.

Steamed Green Beans


1 pound green beans

2 tablespoons butter

coarse salt and freshly ground pepper, to taste


Trim the green beans. Add to a steamer basket over boiling water and steam the beans for 710 minutes or until bright green. Remove to a bowl and toss with butter and salt and pepper.
