Ham, Brie and Apple Sandwich


8 ounces Brie cheese sliced, leave rind on

1 Granny Smith apple sliced

8 slices pumpernickel sandwich bread

1/2 pound honey ham thinly sliced

1/2 cup Major Grey mango chutney


Divide the chutney on half of the bread slices. Place the bread slices (with chutney) and top with cheese, apples and ham. Place remaining bread slices on top. Butter the top slices and place in skillet (might have to work in batches). Grill the sandwiches, topping the other slices with butter before flipping.

Denver Coleslaw


1/2 10-ounce bag shredded cabbage

2 carrots finely chopped

1/4 cup raisins

3 tablespoons white vinegar

1/4 cup sugar

1/2 cup mayonnaise

coarse salt and freshly ground pepper, to taste


In a salad bowl, mix cabbage, carrots, and raisins. In a small bowl, whisk together the vinegar, sugar, mayonnaise and salt and pepper. Toss the mixture with the cabbage and refrigerate until ready to serve. NOTE: Add more mayo if desired.
