Spinach Caesar Salad with Chicken Strips


4 large eggs hard boiled, peeled and sliced

2 tablespoons lemon juice

2 teaspoons garlic, minced

1 tablespoon Dijon mustard

1/4 cup olive oil

1/2 cup shredded Parmesan cheese divided

coarse salt and freshly ground pepper, to taste

1/2 baguette cut into cubes

1/4 teaspoon garlic salt

4 boneless, skinless chicken breasts

8 cups fresh spinach


Preheat oven to 350 degrees.
Place the chicken breasts on one side of a large baking sheet and drizzle with olive oil and salt and pepper. Bake for about 1215 minutes.
While the chicken is cooking, in a large bowl, toss the baguette cubes with a drizzle of olive oil and sprinkle with garlic salt. Spread the croutons on the other side of the baking sheet for the chicken or another sheet (if the chicken is running). Remove the chicken and croutons from the oven. When the chicken is cool, cut into strips.
Using a blender, mix the lemon juice, garlic and mustard and blend until smooth. Add the olive oil in a thin stream. Add half of the cheese and season with salt and pepper.
In the same large bowl, toss the spinach with the dressing, croutons and chicken strips. Top with egg slices and remaining cheese. Season with salt and pepper and serve.

Sesame Parmesan Breadsticks


1 11-ounce can refrigerated breadsticks (like Pillsbury)

2 large eggs

2 tablespoons water

1 teaspoon Dijon mustard

1/4 cup shredded Parmesan cheese

2 tablespoons sesame seeds

1/2 teaspoon garlic powder

cooking spray


Heat oven to 350 degrees.
Spray cookie sheet with nonstick cooking spray. Beat egg(s) in a small bowl. Add water and mustard; mix well. In a shallow dish, combine cheese, sesame seeds and garlic powder; mix well.
Unroll dough; separate into breadsticks. Dip each breadstick in egg mixture; coat with cheese mixture. Twist each breadstick several times. Place 1 inch apart on cookie sheet. Firmly press down ends.
Bake for about 15 minutes or until golden brown. Serve warm.
